Dumbwaiter / Kitchen Elevators

A dumbwaiter is a small goods-only lift that removes a repetitive job from a building. In a restaurant it carries plated food from a basement kitchen to a first-floor dining room; in a hotel it moves linen and room-service trays; in a hospital it moves case notes, sterile packs and meal trolleys. Nobody rides in it, and that single restriction is what allows the whole assembly to be so compact.

Because the shaft is small, a dumbwaiter can be fitted where a passenger lift could never go — into a service riser, a redundant duct or a corner of a kitchen. Table-height units are set with the car floor at counter level so staff load and unload without bending, which matters in a kitchen where the same movement is repeated several hundred times a service.

The car and shaft lining are stainless steel throughout, so surfaces that meet food can be wiped down and disinfected. Landing doors are vertical bi-parting or roller-shutter type and are electrically and mechanically interlocked: the car cannot move while a door is open, and a door cannot be opened unless the car is present at that landing.

Controls are deliberately simple. A call-and-send button station at each landing, an indicator showing where the car is, and an overload cut-out. There is no travelling cable to a car operating panel and no attendant, which is why a well-installed dumbwaiter tends to be the least troublesome piece of lifting equipment in a building.
